We are working very hard to make Rose Creek Farms Cooperative the most convenient way for you to put locally grown food on your tables. It’s amazing what transpires each week in such a limited space and time window.

TatSoi Broccoli Napa Cabbage

The spring produce is beautiful right now. This cooler weather we have been having is wonderful for the Spring veggies. We are praying it does not get too hot too quick and make it all bolt.

Thanks so much for your support of Rose Creek Farms Locally Grown, all of our growers, local food, and our rights to eat it. You all are part of what makes North Texas such a great area in which to live.

TatSoi with Optional Apples, Orange, Avacado

“Wonderful TatSoi salad made with tatsoi, your favorite dressing and add one or more of the following: avacados, oranges, apples, nuts, beets, mushrooms, etc”.

Serves: 2-4

Ingredients:
about 2-4 cups tatsoi mustard leaves chopped up
1/4 cup of your favorite dressing
Options for a delicious salad:
Choose only 1:
A large apple, or
A large avacado, or
A large orange, or
2 large cooked beets
(Pick one from the above list and cut up into small pieces)
add 1/4 cup of chopped pecans or walnuts (opt if you like)
and/or
1/4 cup mushrooms chopped

Directions:
1. Wash the TatSoi mustard leaves carefully, chop leaves into pieces, and leave to drain.
2. Choose only one combination:
Apples and nuts (washed and chopped).
Oranges and nuts(washed and chopped).
Avacados and (opt) mushrooms(washed and chopped).
3. Add your favorite dressing.
4. Add cracked pepper if desired.
5. Mix together and serve immediately.

Upcoming Rose Creek Farms Events

  • The basics of Soft Cheeses, Butter and Yogurt: April 16th, 2013 10:00am-2:00pm. Location is Holy Cross Lutheran Church, 11425 Marsh Lane, Dallas TX 75229. This class covers the nutritional benefits of “Raw Dairy Products”. Includes a demonstration of how to make yogurt, yogurt cheese, kefir and raw milk cheeses. We will learn how to make clabbered butter and cheese, cultured butter, cultured yogurt and yogurt cheese, and a raw milk butter. Class cost $50.00 per person. Please bring sack lunch. (Cultured yogurt and cheese is a pasteurized method of preparation for those not interested in raw dairy products). Class taught by Pamela Klein Johnson.   • Chicken Run: April 24th, 2013 9:30am – 2:00pm Day’s events will include farm tour of gardens and livestock. Bring sack lunch. Hayride and fun activities included. Can you run as fast as a chicken? Learn how to protect and care for our fowl friends. Day’s event costs $7.00 per child, please bring sack lunch.
