Market News

We are working very hard to make Rose Creek Farms Cooperative the most convenient way for you to put locally grown food on your tables. It’s amazing what transpires each week in such a limited space and time window.

Red Inchelium Garlic Roma Tomatoes Rosa Blanca Eggplant Yellow Squash

Delicious summer veggies!

Credit Cards Accepted!

  • The heat is in and the plants are feeling the stress. The heat makes the veggies ripen at a much smaller size than normal. So if you notice smaller sized tomatoes or peppers please understand that is from the intense heat. Still very tasty and delicious!
  • We have broilers again! Yea! We hope to keep those in stock at all times. These birds take twice as long to raise as the other common breeds but we feel this is a superior and healthier choice. Thank you all for supporting this choice of breed.

Please share our coop with friends and family, the farmers have lots of precious vegetables and meats to sell. If you want …. “Like us” on facebook because we try to post pictures and interesting things that go on at the farm there.

Remember: We do give you money back on the undamaged glass jelly jars and rings. We can refund you $0.50 cents each for those that are returned back in great shape.

Remember: We do take used egg cartons that are still in good shape. It helps with the environment and help us keep the cost down.

Thanks so much for your support of Rose Creek Farms Locally Grown, all of our growers, local food, and our rights to eat it. You all are part of what makes North Texas such a great area in which to live.

Recipes

Yummy Herbed Fried Eggplant

Yummy Herbed Fried Eggplant

Serves Four – another favorite side dish

1-2 large Eggplant

3-6 tablespoons of Olive Oil, Coconut oil or bacon fat.

2 eggs beaten in a bowl

Cracked Black Pepper and salt to taste

Flour mixture = 1 cup flour, 1 tsp. salt and 1/2 tsp pepper, 2 tsps powdered garlic, add any or all herbs to taste. Mix flour mixture well.

1/2 tsp crushed Dried Rosemary (opt)
1 tsp crushed Dried Thyme (opt)
1 tsp crushed Dried Oregano (opt)

Note: Tastes wonderful with no herbs if you don’t have them to add.

Clean and cut eggplant sideways making big round slices about 1/4-1/2 inch thick. Dip them in egg (let egg drain off fairly well) and then dip in the flour mixture covering both sides (tap off the extra flour in bowl). Drizzle olive oil in the skillet on medium heat and lay each eggplant over the oil in the pan. Cook on medium heat until soft and light brown crust on each side. Lay them out in a large baking dish. Serve warm.
