We are working very hard to make Rose Creek Farms Cooperative the most convenient way for you to put locally grown food on your tables. It’s amazing what transpires each week in such a limited space and time window.

TatSoi Broccoli Napa Cabbage

The spring weather is heating up. The produce is beautiful right now, but will only hold out for a few more days if the heat holds on. If it does get too hot alot of the greens will bolt and become uneatable.

Thanks so much for your support of Rose Creek Farms Locally Grown, all of our growers, local food, and our rights to eat it. You all are part of what makes North Texas such a great area in which to live.

Arugula with Optional Apples, Orange, Beets

“Wonderful arugula salad made with fresh arugula, your favorite dressing and add one or more of the following: oranges, apples, nuts, beets, etc”.

Serves: 2-4

Ingredients:
about 2-4 cups arugula leaves chopped up
1/4 cup of your favorite dressing
Options for a delicious salad:
Choose only 1:
A large apple, or
A large orange, or
2 large cooked beets
(Pick one from the above list and cut up into small pieces)
add 1/4 cup of chopped pecans or walnuts (opt if you like)
and/or
1/4 cup mushrooms chopped (opt)

Directions:
1. Wash the arugula leaves carefully, chop leaves into pieces, and leave to drain.
2. Choose only one combination:
Apples and nuts (washed and chopped).
Oranges and nuts(washed and chopped).
3. Add your favorite dressing.
4. Add cracked pepper if desired.
5. Mix together and serve immediately.

Dressing to use with Arugula.

*1 cup fresh chopped apples
Note: Add apples after you blend the rest of ingredients with emulsion blender.

*1/4 cup oilve oil
*1/4 cup applecider vinegar (with mother)
*opt) add 4 tbls of lemon juice instead of the vinegar
*1/8 -1/4 cup raw honey (to taste)

  • add 2 cloves of fresh garlic
    *cracked pepper
    Blend with emulsion blender.

  • The basics of Soft Cheeses, Butter and Yogurt: May 4th, 2013 10:00am-2:00pm. Location is Holy Cross Lutheran Church, 11425 Marsh Lane, Dallas TX 75229. This class covers the nutritional benefits of “Raw Dairy Products”. Includes a demonstration of how to make yogurt, yogurt cheese, kefir and raw milk cheeses. We will learn how to make clabbered butter and cheese, cultured butter, cultured yogurt and yogurt cheese, and a raw milk butter. Class cost $50.00 per person. Please bring sack lunch. (Cultured yogurt and cheese is a pasteurized method of preparation for those not interested in raw dairy products). Class taught by Pamela Klein Johnson. Join us in learning how to protect our immune system using traditional nutrient dense foods and drinks such as, yogurt, kefir, kombucha and fermented veggies. This is an informational class and not a cooking class. However we do cover basic methods of preparation. Class cost $25.00 per person. Couples $40.00. Lunch provided.
